Caribbean Coconut Bread

This is one of my favorite recipes, handed down to me from my boss’s recipe box. It is great as a breakfast muffin, snack, or with a meal. Everyone will love this. Feel free to make it your own. Add nuts, raisins, coconut milk, or make it just how it is.

INGRIDIENT

Step: 1

Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan with butter.

Step: 2

Combine flour, sugar, coconut, baking powder, and salt in a large bowl; stir once or twice with a wooden spoon. Add eggs, milk, water, oil, coconut extract, vanilla extract, and cinnamon. Mix well until batter is blended.

Step: 3

Pour batter into the greased loaf pan.

Step: 4

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 15 minutes. Invert onto a wire rack to cool completely.

The sugar hit from the fruit wakes me up and bring me energy to take on the morning. The sweetness is often vilified as the root of all disease, but sweetness is also loaded with fibre, which is great for your digestive system and helps keep you feeling full all day , and less likely grab a side food out of the street food before break .

Make fruit a morning habit is easy . Simply put the fruit in your fridge next to the sweet drink or on the table next to your grain pan , or move your coffee maker or tea kettle — somewhere where you’ll see it. Before you eating the rest of your food , eat your fruit. If you’re not usually a breakfast person.
